SALMON FILLET WITH BLACK OLIVE TAPENADE
LIST OF INGREDIENTS :
2 salmon fillets, 1 container of black olive tapenade, basil, dill, coriander, parsley, paprika, cooking sherry, olive oil, 200 g of salt cod, 1 onion, 2 tomatoes, 4 potatoes, chickpeas
THE RECIPE'S STEPS :
- Mix the tapenade, 5 basil leaves, dill, coriander and 1 tablespoon olive oil in a bowl. Make slices in the salmon fillets and fill the tapenade mixture into the slices. Heat 2 tablespoons olive oil in a pan and cook the salmon fillets 1 minute per side. Place them on a plate and into the oven with the cooking liquid and cook for 10 minutes (gas mark 4 - 180°C)
- Remove the salt from the cod in a fresh water bath, changing water regularly. Crumble the cod by rubbing a fork against it. Chop the onions. Dice the tomatoes. Mix all ingredients together and add olive oil, paprika, vinegar, and chopped parsley. Mix carefully. For garnish, cut the potatoes into small cubes accompanied by the chickpeas.
- Place the garnish on the bottom of the plate, and place a salmon fillet on top. Spread the black olive tapenade on top of the salmon. Put the cod tartare on top. Serve !
